Pasta Salad with everything ... literally



Who doesn’t love pasta? Marinara sauce, white sauce, cheese sauce, no sauce – oh the endless possibilities of joy. Safe to say, I am O-B-S-E-S-S-E-D!! I wish there was some carbs free version that tasted just as delicious.

For this particular recipe, the name says it all. I make this salad quite frequently as a side or sometimes it’s a meal in itself, depending on how lazy I feel. I love that it’s simple, refreshing and most importantly QUICK! You really cannot screw this one up people.

No right or wrongs with this one either. Don’t like potatoes? Don’t add them. Love another veggie that I didn’t mention? Add it! It will all taste good, I promise.

Ingredients:

500 grams of penne pasta
2 Boiled potatoes cut into small cubes
3 Boiled eggs (mashed)
¼ cup Peas
¼ cup Sliced baby carrots
¼ cup Corn         
¼ cup green beans
1 medium sized diced red onion
1 sliced Red bell pepper
¾ cup Mayo
1 cup Chilli ketcup (Regular ketchup is fine too but the chilli really adds a nice kick)
Salt to taste
1 tsp dried Oregano
1 tsp dried Basil
1 tsp black pepper
½ tsp red pepper flakes

Method:
  1. Bring a large pot of salted water to a boil and add the pasta. Cook for 10 to 12 minutes, or until al dente. Pour the pasta into a strainer and move to a large serving dish.
  2. As you are boiling the pasta, boil the eggs and the potatoes as well. Once they are cooked, add the cubed potatoes, the mashed eggs, and all of the above ingredients into the serving dish.
  3. Mix well. Cover and chill until it is ready to serve.
  4. Enjoy!
